Canyon Joe’s Barbecue is a Texas-style barbecue joint located in Lincoln, Nebraska, bringing authentic smoked meats to the heart of the Midwest. Founded by Joe Hager, a Lincoln native inspired by his time in Texas, the restaurant started as a food truck before transitioning to a brick-and-mortar spot in July 2023. Guided by the motto "Faith, Family, Smoke," we built a team of passionate, like-minded individuals who share a deep love for crafting authentic barbecue. Canyon Joe’s specializes in slow-cooked brisket—sliced or chopped to order—alongside other staples like pulled pork, ribs, turkey, pork belly burnt ends, and our in house sausage. The menu highlights traditional Texas barbecue, emphasizing quality meat that doesn’t rely on sauce, though options like original, spicy, and mustard-based sauces are available. From scratch sides such as Canyon Mac (featuring hatch chiles), borracho beans, deviled egg potato salad, and purple cabbage slaw complement the smoky offerings, served with thick-cut white bread in true Texas fashion. Known for its casual vibe, friendly staff, and occasional live acoustics on the patio, the restaurant has quickly gained a following, often selling out early due to high demand—mirroring the legendary barbecue spots of Central Texas.
